Belgian Cookies (Empire Cookies)

christmas cookies 2023

My family called these cookies with jam in the middle, royal icing, and a cherry on top Belgian Cookies. This made it kind of difficult for me to find a good recipe for them back when I first started doing holiday baking in 2007. Luckily, I figured out that many people know them as Empire Cookies and found a recipe for a vegan version online. I don’t remember what was in that recipe, but they were not as good as…

My 10 Favourite Recipes in 2020

falafel dinner

We are all staying home and being safe and and therefore doing a lot more cooking in our own kitchens this year (right?) . So, as we head into the Fall and what will sadly most likely be the Second Wave of the COVID-19 Pandemic, I thought I’d share some of the recipes that I have really loved or that have been on our meal plan on repeat since the beginning of the lockdown. 1. What I love about Hot Damn and Hell Yeah: Recipes for Hungry Banditos (besides the fact it’s actually two cookbooks in one) is that it’s a book full of vegan comfort food with recipes that use simple, affordable ingredients. The recipe that follows is based on one from this book, “Mighty Chewy Brownies” with a couple very small modifications. These brownies are chewy in the middle and just a little bit crispy and flaky on top, and so incredibly chocolatey…

Banana Bread

This banana bread is super sweet and moist, just like the non-vegan recipe I adapted it from. It’s a recipe I had memorized because I made it daily at the local coffee shop I used to work at. I also sometimes like to add in 1/2 to 3/4 cup of semi-sweet chocolate chips to the batter.

Chocolate Chip Cookies

There are dozens, no probably hundreds, of perfectly good chocolate chip cookie recipes out there. But this is a simple recipe that makes chewy, soft chocolate chip cookies every time, just the way they are supposed to be. I’ve tried other recipes, but this one is a stand by. Try it yourself and let me know what you think in the comments.
